What type of cephalopod would you culture?

Hummelincki still has my heart. IME they are extremely gentle, interactive, small enough to fit well in an aquarium and don't require a chiller. Life span is unknown and they are a small egg species but we are talking wishful thinking.

My second choice (but a tough call) would be Metasepia pfefferi
 
O. chierchiae has a lot going for it - small, big-egged, attractive, reasonably active, seems to do well in captivity, does not die after reproducing, takes a variety of prey, and most importantly, it is culturable.
