The acclimation process is the way the octopus is introduced into your tank... the water that the octo was transported in is probably at a different temperature, and likely has a bit different salinity, pH, and other water parameters, so just pulling the octo out of the bag and dumping it in the aquarium could stress it out because of the drastic changes, so most people slowly mix some of the aquarium water into the bag the octopus is in so that the changes are more gradual.
